Sauteed Black And Green Olives - {Olive Neri E Verdi} Recipe - Cooking Index
1/4 cup | 59ml | Extra-virgin olive oil |
2 | Garlic cloves - chopped | |
1/2 lb | 227g / 8oz | Small black brine-cured olives - drained, rinsed |
= (such as Gaeta) | ||
1/2 lb | 227g / 8oz | Small green brine-cured olives - drained, rinsed |
= (such as Arbequina) | ||
1 cup | 237ml | Basic Tomato Sauce - (see recipe) |
In a 12 to 14-inch saute pan, heat the olive oil over medium-high heat and add the garlic. Cook over high heat until golden, about two minutes, then add the olives, and cook for 3 minutes, until softened.
Add the tomato sauce, then lower the heat, and simmer for 15 to 20 minutes, occasionally basting with the tomato sauce.
This recipe yields 2 cups.
